Our wine of the week pick today is a Cabernet unlike any you’ve probably had before.  This Cabernet is Santa Digna Cabernet Rose’ 2006 from Chile. 

Yes, we’re talking RoséI  The just squeezed juice of the Cabernet Sauvignon is left on the grape skins for a short time resulting in a wine the color of the last red rays of the setting sun.

Take a sip and it splashes into your taste buds… round, full red currant and strawberry fruitiness with the tart dryness of classy rose’. 

Cabernet Sauvignon is expensive so its unusual to find a Cabernet Rose’… and for ten dollars a bottle no less. 

If you’re not a Rosé fan the Santa Digna will convert you. It’s incredibly versatile with food, from spicier Asian dishes to summer salads, or from simply something to sip with sharp cheese to a grilled chicken sandwich. 

Drink it well chilled any time.  You’ll even find it a refreshing summer aperitif.

Winemaker’s Notes and Comments:

Compared to more traditional rosés, the Chilean Santa Digna is a wine of unmistakable personality: original, young and nonconformist. Its stylish charm is the result of careful vinification of the Cabernet Sauvignon variety, during which only a short contact is allowed between grape skins and juice.

Delicious with cured sausages, meat pies and many pasta dishes. The perfect wine for sweet-and-sour Chinese dishes.

Fragrant and floral, with a temptingly fruity sensuality. On the palate the wine is voluptuous, with a silky texture and the sort of fresh, fruity body (blackcurrant, cranberry, and redcurrant) that only Pacific Cabernet Sauvignon rosés can offer.

Rosés are special wines; they have a nonconformist and youthful personality. Our rosés gather together sensual lightness and a definite presence.

Torres rosés can adapt to almost any plate, almost any situation. They are perfect enjoyed on a terrace, accompanied with rice dishes or even a fish soup.
