Judy Gilliard’s Holiday Gathering Recipes - Goat Cheese Spread, Mini Maytag Blue Cheese Burgers, Tomato, Mozzarella and Basil Pizza, Feta Cheese Spread, Asparagus with Proscuitto

 

Goat-Cheese Spread

Serving Size: 6

Goat cheese has become one the favorite cheeses in fashioning new recipes from pizzas to salads.  Here we are taking some of the fat calories out while keeping all the wonderful flavor.  For a great appetizer fill snap peas with the spread.

  4           ounces goat cheese

  8           ounces light cream cheese

  1           teaspoon  herb blend

Mix all ingredients into a food processor with a steel blade until smooth.

Place into an airtight container and refrigerate.

Mini Maytag Blue Cheese Burgers

Serving Size: 12   

  1             pound ground sirloin

                 salt and pepper to taste

  6             ounces Maytag blue cheese, crumbled

  12           dinner rolls

                 olive oil spray

Divide ground sirloin into 12 pieces and pat out to little burgers, salt and pepper each side and cook on a grill until desired temperature.

Stray both side of dinner rolls with olive oil spray and grill.

Place burgers on the buns and sprinkle with Maytag blue cheese.

Mozzarella Tomato Basil Pizza

Serving Size: 12

                        CRUST

     2/3   cup  water (70º to 80ºF)

  2         tablespoons olive oil

     1/2    teaspoon salt

  1 1/2    cups bread flour

  1 1/2    teaspoons yeast

                        TOPPING

  1 1/2     cups mozzarella cheese -- fresh, sliced

  1           cup tomato -- seeded and chopped

     1/4     cup fresh basil -- thinly sliced

To make crust: Measure all ingredients into bread machine pan in the order suggested by manufacturer. Process on dough/manual cycle.  When cycle is complete, remove dough to lightly floured surface. If necessary, knead in additional flour to make dough easy to handle. Roll or press dough to form 12-inch circle on greased pizza pan or cookie sheet. Cover; let rest 30 minutes.

To top: Place the sliced cheese and tomatoes evenly over dough. Sprinkle the sliced basil over the top. Bake at 425ºF on lowest oven rack 20 to 25 minutes or until done, cut into bit size pieces.

Feta Cheese Spread

Serving Size  : 6

This is perfect to serve with crudities.

  8             ounces dry curd cottage cheese

  4             ounces feta cheese salad dressing

     1/4      teaspoon cayenne pepper

Place all ingredients in the food processor and process until smooth.

Asparagus with Prosciutto          

Serving Size: 8

If you are using thick asparagus wrap a single spear in the prosciutto.

  1              pound asparagus spears -- (thin)

  1              tablespoon olive oil

     1/2        teaspoon fresh ground black pepper

  4              ounces prosciutto -- thinly sliced

Preheat oven to 400 degrees F

Bend each asparagus until it breaks, throwing out the end section. Cut the asparagus in 1/2 inch pieces on a angle.  On a sheet pan toss asparagus olive oil,  and black pepper.  Roast in a pre heated over  for 10 minutes. Cool.  Wrap 3 asparagus spears with prosciutto and grill about 1 minute on each side.
