Buco Recipe
There are specific
times of year that seem perfect for certain kinds of food and wine.
Like a pot bubbling for hours with simple hearty goodness inside
and a big red wine handy for the dinner table.
One of our favorites
is a classic Italian dish from Milano . . . osso buco.
Osso buco is a dish
of braised veal shanks slow cooked with lots of herbs and wine.
And the best part is
its really easy to make.
Use a wine to cook
with that isn't expensive since the key to cooking with wine is
cooking off the alcohol to concentrate and bridge the flavors.
Pick up a five dollar
bottle of red for that.
But to drink along
with that great osso buco? Well, that's another story.
Our choice is Barbaresco.
This is a 100% Nebbiolo wine - loaded with intense aroma and is
a mouthful of chewy flavor that's as hearty as the meal.
It's a trip to Milan in a bottle.
Not a bad winter dream, for sure.
