Riesling Recipe
Recipe
Riesling is a fun, drinkable
white wine that is often overshadowed by our love affair with Chardonnay.
It ranges from elegant, slightly sweet version famous from Germany,
to more Americanized and fruity types from California and the Northwest.
Riesling's delicate taste
profile is a perfect match with Salad Niçoise.
Salad Niçoise is
fancy talk for a tuna salad with a twist.
When you combine all white
meat tuna with other interesting ingredients like chilled green
beans, salty Kalamata olives and tomato wedges on a bed of lettuce
. . . you're just primed for a Riesling to go with it!
Sounds good for a Saturday
lunch doesn't it?
Rieslings tend to have
lower alcohol, which adds to the clean, food friendly taste.
It lets the combo of flavors
come through.

Salad
Niçoise
Serves 4
Ingredients:
¼ cup olive
oil
½
cup parsley, chopped
12
oz. green beans, halved
1
lb. small red potatoes, halved
3
6oz. cans white tuna
3
hard boiled eggs, quartered
¼
cup capers, drained
½
cup Nicoise olives (or pitted Kalamata)
1
head red or green leaf lettuce
8
anchovy filets
Salt
Pepper
Vinaigrette or
Italian dressing
Preparation
- Boil potatoes in salted water until
fork tender (approx. 10 minutes). Drain.
- Toss potatoes in olive oil and parsley
then refrigerate ½ hour to chill.
- Steam green beans until tender but
still crispy (approx. 3 minutes). Remove and hold in cold water
- Arrange lettuce bed on a platter
then mound tuna in center
- Decoratively surround with eggs,
drained green beans, parsley potatoes, olives and anchovies
- Sprinkle capers over the top
- Season with pepper to taste
- Drizzle with your favorite vinaigrette
or Italian dressing
- To serve, pass the platter and additional
dressing.
Serve with chilled Riesling!
