Art or Science

 

Recently we caught up with Sam Baxter, the winemaker from Terra Valentine Vineyards at a tasting. We talked a lot about wine! He told us how much of winemaking he thinks is science now days versus old time art?

 

To me, the art of tasting and blending . . . I think even the art of even pruning a grape vine is really the slant I like to take at approaching wine and making high quality wine. However, you do need to respect the science and to be aware of what is going on with the wine at all times if you're going to get the best quality in the bottle.

And it's really about prioritizing your style and what you're going to put in the finished bottle is what you decided is important enough to pay attention to . . . and how you kind of prioritize the decisions that you make throughout the production of the wine.
